What an enjoyable evening of food, film and fellowship. It was great to see so many community members come out in support of a new documentary (American Meat) exploring meat production in America and the movement toward smaller family farms raising happy healthy animals on pasture. Cane Creek Farm’s Eliza MacLean was invited to join the post-film Panel Discussion. Thank you for allowing us to share in this important conversation.

Before the film, starting at 6:30 p.m., an optional pre-screening dinner will celebrate the bounty of food produced right across the street from the movie – chicken and pork from Cozi Farms, greens and veggies from the Saxapahaw General Store’s own garden., in collaboration with Saxapahaw’s own Bushy Tail Farm.

The film then shifts to the burgeoning sustainable, local-food movement made up farmers, food advocates, chefs and everyday folks who could change everything about the way meat reaches the American table. The film stars Joel Salatin, the legendary Virginia farmer who leads a movement of meat producers who raise their animals outdoors and without antibiotics.”

We need to clear some space in our freezer which means tomorrow is your lucky day. So we’re planning a big sale at the farm for Saturday January 8th. We will be heavily discounting many of our products. This is a great opportunity to fill up your freezer and feed your family wonderful and healthy meals through the winter, all for a great price. We’ll make some apple cider and hot cocoa, some chili, perhaps a few beers, and we’ll be at the farm ready to load you up. So, at 10am on Saturday January 8th until 4 in the afternoon, come visit the farm and bring a cooler along. In addition, we will have plenty of farm swag for sale too; t-shirts, tote bags and stickers. As always, you’ll be able to look around the farm, which, if the weather is descent, can be absolutely beautiful in the winter.

What you can expect to be discounted (10-40%): We’re offering great discounts to you all in order to free up some freezer space.

• Beef: a huge selection of beef including high-end steaks (ribeye, strip), whole primals (filet, strip, ribeye), roasts, other steaks, ground beef, and more

About Eagle’s Nest Camp

Eagle’s Nest Foundation (ENF) is the parent organization of The Outdoor Academy (OA) and Eagle’s Nest Camp (ENC).  Both programs take place at our campus in Pisgah Forest, NC.  Established in 1927 and chartered nonprofit in 1950, we are one of the oldest non-profit 501(c)(3) camps in the Southeastern United States.

Eagle’s Nest’s unique educational outdoor programs serve children from diverse backgrounds.  Both Eagle’s Nest Camp and The Outdoor Academy exemplify our mission of providing experiential education for young people, promoting the natural world and the betterment of human character.

Camp, accredited by the American Camping Association, is for boys and girls ages 6-18, and offers 1, 2, and 3 week summer sessions.  ENC enrolls around 527 campers over the course of four sessions in the nine weeks of the summer.

OA is a hands-on, college-preparatory semester school for 10th graders, and is accredited by the Southern Association of Colleges and Schools.  The core academic curriculum is very similar in rigor to challenging private and public schools.  OA enrolls approximately 22-30 new 10th grade students every spring and fall semester of the school year.  Over 600 alumni are spread throughout the Southeastern US and the world, of which approximately 45 attended sending schools in the Triad.

Fund History
Helen Valentine Waite has been associated with Eagle’s Nest since 1958 as a counselor, director and trustee.  As the camp director, she founded the Hante Wilderness School and the Birchtree Outreach for School Programs.  As the Executive Director, she founded The Outdoor Academy of the Southern Appalachians, a semester school for 10th graders.  Under her leadership, and with the Board of Trustees, the Eagle’s Nest Foundation was created, merging all of these experiential programs under one umbrella in 1991.

Helen’s dream for Eagle’s Nest Foundation is to provide experiential education for young people, providing personal connection to the natural world, to art, and to the spirit of “meaningful self” within a healthy, functional community. Her dream for The Outdoor Academy is to provide academic rigor, accredited and appropriate for college preparation, integrating the natural world and active experience into a semester school curriculum for high school education.

In recognition of this creative service and of her dedication to children and to the natural world, her family, Noni Waite-Kucera, Alex Waite, Meggan Waite Hartman, and Moseley Waite, establish the Helen Valentine Waite Endowed Scholarship Fund.

Fund Purpose
The purpose of this fund is to provide one or more scholarships per year to participants in any of the foundation’s programs. The recipient must have financial need and must demonstrate a desire to find his or her own purpose and meaning.   Candidates must be committed to working and learning in the great out-of-doors, with a record of service and action which shows compassion for fellow humans in community, both locally and globally.

The recipients and the amount of the scholarship shall be determined by the Eagle’s Nest Foundation administration in accordance with the policies established by the Board of Trustees of Eagle’s Nest Foundation.

It’s that time again!  We are hosting our Final Banquet of the summer (a little late…I know) – Saturday, October 16, 2010.  The weather will be beautiful, the food will be amazing, and I hope all of you can come.  I know many of you missed the Arabian Nights party we had last year, and that’s a bummer.  But this year there’s no excuse!  This is going to be a dinner party hosted by Mark Twain, who has written half of his newest book – Adventures of Huckleberry Finn.  And he needs your help to finish the story.

Chef Christopher McKinley of BoxCarr Farms has agreed to cook the meal for us. You may have experienced his delicious cooking at one of the farm dinners he has done in conjunction with Goat Lady Dairy and Celebrity Dairy.

Tentative Menu:

• Frogmore Stew-Shrimp, sausage, and corn soup with stone ground grits
• Wood roasted fresh ham, Sauteed mustard green and sweet onion stuffing, roasted turnips with rapini.
• S’mores-chocolate pudding, Italian meringue, goats milk caramel, graham cracker

Fullsteam Brewery is doing the beer for the event.  Fullsteam’s mission is to create a distinctly Southern beer style that celebrates the culinary and agricultural heritage of the South.
